About the Recipe
Crisp baby gem leaves are gently coated in Caesar dressing and finished with croutons and shaved Parmesan for a simple, classic salad.

Ingredients
2 heads baby gem lettuce, cleaned
30 g croutons
30 g shaved Parmesan cheese
70 g Caesar dressing
Add 60 g chicken, prawns, pancetta or biltong if required
Preparation
Wash and clean baby gem lettuce, use only the tender inner leaves.
Leaves must be crisp and not limp…… do not use cos.
After washing, ensure that they are stored in an upright position, wrapped in paper towel.
Place leaves in a bowl, do not break leaves unless too large. Add croutons, add Parmesan.
Add dressing, mix by rolling gently and serve.
