Chicken Liver Parfait

We absorb information, ideas sub consciously. Often the idea we imagined has already been imagined and displayed by someone else. I would imagine this was also something I subconsciously saw and put on paper.

With a light nut crust, baked and topped with a port jelly, sliced. Originally imagined with a confit tartlet, it ended with a confit duck shaped like a cigar wrapped in kataifi pastry.
