Gin Cured Salmon

This dish has come in and out of my journey, the salmon is cured in a selection spices that show when gin is made. Obviously juniper berries, lemon, pepper, chamomile, rose petal, coriander, pepper and liquorice. The idea was to wrap the salmon around a salad with prawn and avocado. This we served with creme fraiche, herb oil.
